Abstract

Binahong (Anredera cordifolia) is one of the useful medicinal plant. Nevertheless, post-harvest studies of Binahong still lack of data. In terms of drying, very view studies have attempted to apply advanced drying methods to improve Binahong quality and reduce drying time. The aim of this study was to determine the effect of post-harvest methods on the quality aspect of Binahong. The leaves of Binahong was dried at oven in 40oC and direct sunlight. Two pretreatments of drying method adopted were steam-blanching and non-blanching. Experimental results showed that steam-blanching pretreatment can abbreviate the drying time on both treatment of oven and direct sunlight drying. However, steam-blanching can cause leaves browning and decreasing in total flavonoid and total phenolic content during the drying process. The TLC showed that all of the treatments contain the vitexin compound. The microbial contamination evaluation showed that the highest total plate count showed by oven drying. The steam-blanching pretreatment combine direct sunlight were recommended.
