This paper tries to analysis and discuss about the types and conversation between the foreigners tourist and staff. The data used in this paper are taken from conversation between waiters and waitress at Restaurant with guest. All of the data are collected and classified based on the function of English and English expression. Based on the analysis it is found that English used by waiters and waitress at Flames Cafe and Restaurant Sanur area are: Greeting; is used by peoples to greet or establish contact with their friends or anybody. This expressions can also using to begin a conversation or open a discussion. Inviting someone; this expression is used to invite someone to do something. Suggesting; is the function of English used by peoples to giving some suggestions to the other peoples who want to suggest something above us. Giving information; is function of English used by peoples to giving information to the other peoples. Requesting; is one of function of English that I used to ask someone to do something for us. Apologizing; is when you do something wrong, you can save yourself a lot of your trouble by apologizing first before someone complaints to you. Thanking; is one of English function that are used when someone has done something for us. Saying goodbye; is English function to use when we want to leave others peoples. They used communicative function verbal or directly and their more practice using English when they gives services. Because all the staff using expression with good English and say it politely and clearly. These language function expression are used in formal way and polite way but some of them are also using neutral language or informal language. Most of them used function of English and expressions without function of English rules and also if we see the sentence that they used, the sentence to be ungrammatical but their purpose can be understood by the guest when they served the guest, they try to give the best service.
