Abstract
ABSTRACT Rosella have anthocyanins can act as natural color on milk candy production. The purpose of this research was to determine the best percentage of rosella powder addition on antioxidant activity, color and yield of milk candy. The material research were used fresh milk, sugar, and rosella powder. The method was used laboratory experimental using a Completely Randomized Design (CRD) with 4 treatments and 4 replications. The treatments were P0 (without rosella powder addition), P1 (1%), P2 (3%) and P3 (5%) addition rosella powder on milk candy production. The data were analyzed by Analysis of Variance (ANOVA) and continued by Duncan-s Multiple Range Test. The result showed that the addition of rosella powder gave highly significant different effect (P<0.01) on antioxidant activity, lightness, redness, yellowness and yield of milk candy. The antioxidant activity of candy milk 8.58 - 10.28, lightness (L) 48.33 – 52.53 , redness (a*) 15.00 – 19.10, yellowness (b*) 16.80 – 20.00, and the yield 77% - 80.74%. It could be concluded that addition of rosella powder 5% on milk candy gave the best treatment.

Abstract
Sexing sperms is one of the reproductive technologies that is considered as a promising alternative in the effort of reproductive efficiency to produce offspring according to the desired sex. The method for maintaining and extending the perms can be done by using bovine serum albumin (BSA) column with Tris Buffer at room temperature and waterbath without damaging the quality of the sperms. The purpose of this study was to determine the effect of BSA - Tris Buffer extender on the quality of sexed sperms after thawing at 27°C and 37°C. The study was divided into two treatments; P1 was Tris extender in the temperature of 27°C and P2 was Tris extender in the temperature of 37°C with 6 replications. Those treatments were compared using a Paired Sample test (T-Test). The parameters observed in the present study were motility, viability, abnormalities, and plasma membrane integrity. The results showed that motility, viability, abnormalities, and plasma membrane integrity of the sperms X and Y at 27°C and 37°C after sexing did not differed significantly (P>0.05). Likewise, after equilibration, the motility of sperms X at 27°C and 37°C did not differed significantly (P>0.05), however, sperm Y at 27°C and 37°C showed a significant difference (P<0,05). Viability and abnormalities of sperms X at 27°C and 37°C differed significantly (P<0,05) but sperms Y at 27°C and 37°C did not show any significant differences. After thawing process, motility, viability, abnormalities and plasma membrane integrity of the sperms X and Y at 27°C and 37°C did not show any significant differences. However, it can be conluded that the quality of sexed sperms in the present study is still good because it has motility above 40% and abnormalities below 20%.

Abstract
The aim of this study was to find the proper method for sperms immobilization without reducing DNA integrity and damaging the shape of bovine sperms . Sperm immobilization was carried out by double shots using laser Octax MTG with wavelength of 1.48 μm and Eye Ware 3.0 software. A total of 20 sperms were shoot at 4 points, which was the tail end, the mid-tail, the neck and the head of the sperms. The shooting of 1.48 μm laser had the highest effect on immobility reaching 100% on the head and the DNA integrity of the sperms reached up to 90%, the shape of sperms were remained normal (100%) and did not showing significant effect. The results of this study indicated that (1) the laser diode with a wavelength of 1.48 μm at the mid-tail section of the sperm was most effective for sperm immobilization; (2) the use of laser diodes with a wavelength of 1.48 μm can be used to immobilize the sperms before intracytoplasmic sperm injection (ICSI). The diode laser shooting with a wavelength of 1.48 μm at the tail was the most effective in immobilizing the sperms with an immobility of 95.00% ± 5.98 and DNA integrity of 85.00% ± 11.65.

Abstract
The objective of this study was to determine the effect of using Bracket Oliphant medium (BO) extender at different temperatures on motility, viability, abnormalities and plasma membrane integrity of sexed sperms using fresh semen of Sumba Ongole (SO). Sexing sperms was carried out using a BO extender in the BSA column. The parameters observed in this study were motility, viability, abnormalities and plasma membrane integrity and were compared using the Paired-Sample t-Test with two treatments and six replications. P1 was BO extender with a temperature of 27oC and P2 was BO extender with a temperature of 37oC. The results of this study showed that there were no significant different (P>0.05) between the two treatments of the sperms X for motility (65.8%, 53.3% and 41.3% vs. 66.3%, 55.0% and 43.3%), viability (65.9%, 68.0% and 67.0% vs. 67.7%, 61.9% and 69.6%) and plasma membrane integrity (70.1% and 59.8% vs. 64.9% and 64.2%) after sexing, equilibration and thawing, but differed significantly (P<0.05) in abnormalities after sexing (15.5%, 15.6% and 16.2% vs. 15.5%, 17.3% and 19.5%). Likewise, the motility (66.7%, 55.8% and 42.1% vs. 65.8%, 55.0% and 42.1%), viability (68.8%, 59.0% and 64.5% vs. 67.4%, 59.4% and 71.7%), abnormalities (13.6%, 19.4% and 16.6% vs. 18.9%, 18.6% and 17.2%) and plasma membrane integrity (68.1% and 57.5% vs. 62.8% and 62.8%) of sperms Y at P1 and P2 did not differed significantly (P>0.05). The difference in the value of abnormalities after sexing is still within the limits of abnormalities of the sperms. It can be concluded that the use of the BO extender method can be used at a temperature of 27oC and at 37oC in the process of sexing sperms.

Abstract
Rice bran is one of important ingredients in chicken diet as protein and energy source. It accounts for 15 – 30% in chicken diet. Rice bran has great potential to be used as feed ingredient in tropical country. However, the data of rice bran potential in many areas are not available yet. The aim of this study was to observe the potential of rice bran in Sidenreng Rappang regency as local feed ingredient. This study used descriptive method and analyzed by simple statistical analysis. The sampling locations were five rice milling units according to production capacity. Production capacity, milling process, quantity of end and by-product were observed in this study to get the data of rice bran production as primary data. Harvested area and rice grain production were obtained from BPS (Statistics Indonesia) as secondary data. The results showed that milling process of rice grain was producing 60.35% of rice, 0.004% of broken rice, 6.54% of rice bran, and 33.09% of husk. Based on the data of rice grain production (667,523 ton), it could be estimated that rice bran production was 43,656 ton in Sidenreng Rappang. The highest rice bran production was in Pitu Riawa district (6,553.21 ton) and the lowest rice bran production was in Tellu Limpoe (2,071.47 ton).

Abstract
Biotechnology in animal production is widely used to increase not only the number of population of livestock animals to meet the requirement for world demand of animal products but also for endangered species to enhance the propagation and sustaining the current levels of biodiversity and genetic diversity. Biotechnologies can affect efficiency of reproduction and therefore also selection programs (artificial insemination, embryo transfer, sexing, cloning and other related techniques), improve determination of genetic values of animal (genetic markers, candidate genes and other related techniques, and biotechnologies can transform artificially the genome at the DNA level such as genetic engineering, gene transfer and related techniques. The objective of this study was to review the importance of the most common current biotechnologies on animal production and some results that have been implemented in Indonesia.

Abstract
Broiler was one of poultry which produce white meat. The aim of this study was to know the role of gender on broiler farms in Bone Regency, South Sulawesi Province. Total sample was 29 broiler farmers who were choosed purposively. The data were collected through observation and interview by using questionnaire. The role of gender on broiler farms consisted of activity of men and women in production system; access on training, credit facilities, cooperation and farmers group; control on broiler marketing and consumption; and benefit of broiler farms. The data were analyzed descriptively using average, frequency and percentage. The result of this study revealed that the role of gender on broiler farms was dominated by men. Women should be given a chance to involve in broiler farms.

Abstract
Product quality is very important to create competitive strategies with other companies and to improve value add, extend product life and extend the reach of marketing. One of the fisheries processing activities in Bulukumba Regency is salt-boiled fish, but these business still pay less attention to sanitation and hygiene which results in low quality and durability of salt-boiled fish product. This research aims to analyze the strategy to strengthen the salt-boiled fish processing business in improving product quality. This research was conducted in salt-boiled fish POKLAHSAR (Processing and Marketing Group) business in Bulukumba Regency, South Sulawesi. The data were analyzed desctriptive qualitatively and quantitatively using SWOT analyses. The results of the research show that the Internal Factors Analysis Summary (IFAS) difference score was -0.35, while the External Factors Analysis Summary (EFAS) score was 1.60. This shows that the strengthening strategy is in quadrant III which means the company faces enormous market opportunities, but on the other hand faces some internal obstacles / weaknesses. The focus of this strategy is to minimize the companys internal problems so that it can create a better market (turn arround). The strategies that can be applied are to increase product quality through government-s policies such as GMP and SSOP training, to aplly sanitation and hygiene system to processing business and to manage the business finance well so it can increase the existing facilities and infrastructures by following technological development

Abstract
The diversity of rumen bacteria in ruminant animals is highly determined by various factors, including the breed of the animal and the feed consumed. The purpose of this study was to evaluate the diversity of rumen bacteria of bali cattle due to the provision of ration consisted of rice straw and elephant grass as a basal diet. Three adult bali cattle were given ad libitum a ration consisted of rice straw and elephant grass for four weeks before taking the rumen fluid samples. In addition to the basal diet, each animal was also given a concentrate at the rate of 0.5% of the body weight. Rumen fluid samples were analyzed for pH, NH3 and VFA, while the diversity of the rumen bacteria was determined by the Illumina Sequencing technique. The results of the study showed that rumen conditions of the animal were ideal for rumen bacterial growth, indicated by the value of rumen pH, NH3, and VFA of 6.8, 156.7 mg/L, and 114.3mmol/L, respectively. Furthermore, based on SILVA taxonomy, two dominant phyla, i.e. Bacteroidetes and Firmicutes, were successfully identified in this study. At the genus level, the most dominant group identified was Prevotella 1 followed by the Christencenellaceae R-7 group. The analysis also showed the existence of uncultured rumen bacterium and uncultured bacterium with a percentage of less than 5% of the whole population of rumen bacteria. In conclusion, the feed provided for the animal was good enough to support rumen bacterial growth and the Illumina sequencing technique used in this particular study was able to identify the existence of dominant rumen bacteria as well as the uncultured rumen bacterial of bali cattle under such typical feeding condition.

Abstract
This study aims to determine the shelf life of pasteurized milk with the addition of matoa leaf extract over a certain period of time and at 4°C. The material used in this study was 0.1% matoa leaf extract which was added to pasteurized milk. This study used a completely randomized design (CRD) with 5 treatments and 3 replications. This treatment consisted of P0 (0 storage day ); P1 (3 storage day); P2 (6 storage day); P3 (9 storage day); P4 (12 storage day). The parameters measured were the Total Plate Count (TPC) and pH value. The addition of matoa leaf extract was not significantly influence the decrease in the number of bacteria during the storage process. Conversely, the addition of matoa leaf extract significantly decrease the pH during the storage period.

Abstract
Pasteurized milk is milk that heated below boiling point in order to kill the pathogenic bacteria in the milk, but bacterial spores and certain bacteria have not been killed, resulting in a relatively short shelf life of pasteurized milk. One of the damage caused by bacteria is the increased acidity in pasteurized milk during storage. Rosella flower extract is expected to be one of the natural preservatives in pasteurized milk. This study aims to determine the effect of increasing the level of rosella flower extract and storage time on pH and total acid of pasteurized milk. The research design used was a completely randomized design (CRD) factorial pattern 3 X 4 with 3 replications. A factor was the level of rosella extract 0%, 2% and 4%. And factor B was storage time 0, 3, 6 and 9 days which three times replications. The parameters measured in this study were the pH value and total titrated acid. Based on the results of the study showed that the addition of rosella flower extract level and storage time significantly affected the pH value and total titrated acid. As the level of rosella extract increases, the pH value decreases and the total acidity of pasteurized milk titrated increases. Prolonged storage causes lower pH and increases total titrated acid. The conclusion of the study is that pasteurized milk with the addition of rosella flower extract has implications for decreasing pH and a lower increase in total titrated acid during storage compared to pasteurized milk without rosella flower extract

Abstract
The aim of this article is to discuss trends and forecast meat production and consumption to 2027 in Indonesia by using different statistical forecasting models. Forecasting of meat production and consumption is important to be carried out so that food security development can be planned strategically in the future. Meat production and consumption are observed in the period from 1990 to 2017. The types of meat analyze include beef, poultry, goat and pork. Based on the seasonality and trend data, the forecasting methods used are Double Exponential Smoothing and Holt-Winters Seasonal Smoothing. All data is analyzed using STATA software. The accuracy of forecasting is examined based on the root mean squared error. Accordingly, the Double Exponential Smoothing method is more accurate than the Holt-Winters Seasonal Smoothing in predicting meat production and consumption for 2027 in Indonesia. Overall, meat production and consumption are projected to increase by 4,449,286 tonnes and 5,061,993 tonnes respectively. Hence, meat consumption is higher than meat production. Therefore, livestock technology innovation should be carried out thoroughly in the fields of breeding, processing/production, marketing and increasing the capacity of human resources both farmers and extension workers in order to produce livestock products efficiently and effectively.

Abstract
The characteristics of the process of moving duck breeding carried out by the moving duck farmers in Pinrang Regency, one of which can be seen through its migration cycle. The dynamics of movement are based on the time of harvest. This study aims to analyze the typology of the patterns of movement of ducks moving in Pinrang Regency based on the distance of movement. This study uses a qualitative method with a case study of shifting duck farmers in Pinrang Regency. Comparative analysis is applied in looking at the cycle of displacement patterns based on distance. The results showed that the pattern of movement of shifting duck farmers can be classified into the pattern of short-distance, medium-distance and long-distance movements where these three patterns have their characteristics based on indicators of distance traveled in one year, number of ducks transported during the movement, number the location occupied for duck grazing, the type of conveyance used, and the form of the product as a result of the income obtained.

Abstract
Water buffalo has an important role in the agricultural economy of many developing countries in Asian source of milk, meat and draft power; security of living that requires minimum inputs; and also due to its unique characteristics which is resistance to diseases and parasites, long productive lifespan and higher capability of consuming low quality forage that can positively address the challenges by increasing rustic livelihood, poverty alleviation and food security. The data on the water buffalo productivity and related aspect of breeding management practices particularly at the village level farming system is relatively scarce and population growth rate is slow. Water buffalo production lags and has a reputation of being poor breeders due to a propensity for long calving intervals, high incidence of postpartum anestrus and late age of maturity. The lack of water buffalo development may be related to many factors and problems ranging from practical husbandry, genetic and environment with limited attention given. Even though various animal breeding and management programs have contributed to this improvement, there are constraints hampering the growth which require proper attention by initiating realistic breeding policies for genetic improvement. In view of this, optimum breeding policies are presented with their strengths and shortcomings. In order to improve them, systematic breeding is necessary. By focusing on important aspects, such as productivity and development, milk and meat production and quality, disease resistance, longevity, heat stress tolerance, and fertility, this review can serve as a foundational piece for those studying this animal species. The review paper gave an account of the water buffalo production trend highlighting the population, breeding management practices, breeding progress and update information on genetic strategies and the breeding policy of the water buffalo breeds for meat and milk production and grading up low producing animals with breeds of superior genetic merit. Characteristics were described, breeds and types of water buffalo with special attention to the introduction of this species and the crossbreed phenomena between river (2n=50) and swamp (2n=48) types, giving origin to a (2n=49) crossbred. Draft animal production is another economic performance that was emphasized as important mainly among smallholder farms. The importance of water buffalo to the economic and social framework especially of the small and landless rural poor in several countries of Asia. The potential for breeding improvement of certain traits was discussed. Some major national and international efforts being made to improve water buffalo production have also been cited.
