Abstract
A successful tourist destination must offer an integrated component of the tourism system and competitive destinations. Today, the destination finally competes on the quality of the tourist experience offered to visitors. This study aims to measure the influence of the experience and involvement of tourists on the perceived competitiveness of destinations. The survey was conducted on 200 tourists who visited Siring Banjarmasin on weekends. The results of the analysis using Structural Equation Modeling show that because most Siring Banjarmasin tourists are local people, the stages in the quality of experience and tourism involvement do not have a significant effect on the perceived competitiveness of destinations.

Abstract
The use of renewable energy is an important issue that is being promoted internationally at this time considering the supply of fossil energy is increasingly depleting and requires a very long time to be renewed. One of the uses of renewable energy that is being promoted is the use of biodiesel as a substitute for diesel fuel. This utilization is carried out by mixing biodiesel with diesel with quantity in accordance with the rules that have been applied in each country. That is why the biodiesel supply chain must be described in detail to obtain minimum economic costs and environmental costs. This paper presents a comprehensive review on current biodiesel supply chain models. A review on current state of biodiesel supply chain concludes by highlighting the unaddressed area or the gaps existing in the current literature by suggesting future research in biodiesel supply chain specifically in area case study in Indonesia.

Abstract
Maintaining the use of mother tongue in interacting, switching to using the language of the host, or using ethnic languages side by side with the host language in a new place are basic issues that are faced by migrants as a diaspora community. This study aims to provide evidence of communication patterns and language inheritance in the diaspora community in Bali in order to find the right accommodation model that must be carried out by the diaspora and Balinese ethnic communities in interacting that can overcome various disharmonies. It is sociocultural using a qualitative approach conducted at two locations of Muslim diaspora communities in Bali. The data were collected through questionnaires, in-depth interviews, and direct observation. The analysis was carried out qualitatively by applying language choice and linguistic accommodation theories. The result of the analysis is presented through interpretive descriptive explanations. The research findings show that language choice turned out to be evidence of how the local diasporas maintain their social identity.

Abstract
Abstract Indonesia is well-known for its diversity of ethnicity, language, religion and tradition. The various of local languages makes Indonesia differ to another countries. Furthermore, what makes Indonesia special is the existence of local languages which its whereabouts only exists on the paper, but also is proven by the use of language this modern era. As the part of Indonesia, Sikkanese (Sikka regency people) use their local language in daily communication aside from Bahasa. The use of local language in daily communication is one of strategies to preserve and inherit the culture. There are some forms language which used by Sikkanese in communication and Proverbs is one them which still exist until today. Unfortunately, many Sikkanese are not familiar even do not know the meaning of several Proverbs. This matter leads to several misunderstanding and misinformation, and even worst this condition bringing half of Sikkanese no longer to use proverbs because it is incomprehensible. This paper discusses about several forms, meanings and functions of Sikka proverbs which commonly occur in daily communication that are difficult to be understood

Abstract
Reclamation is an effort to repair or maintain the function of lands affected by mining activity. It is done to make the lands useful and to ensure revegetation. The lands which are formerly used for mining activity need reclamation in order to bring back ecosystem, micro-climate, land fertility and water storage function to resolve the problems on limited fertile land in attempt to increase palm production. Therefore, there are two ways which should be conducted: 1) controlling the function of farmland, 2) increasing the quality of marginal lands to be used as farmland. This research aims to find out the effects of goat manure and cinder husk distribution with various doses to the development of palm plantation. The experiment was done in Pijoan, Muaro Jambi, throughout 5 months, from April to September 2019. The experiment was conducted with complete random design, consisting of 8 treatments with 3 times repeatition. P1 : 150 g of goat manure + 325 g of cinder husk, P2 :175 g of goat manure + 300 g of cinder husk, P3 : 200 g of goat manire + 275 g of cinder husk, P4 : 225 g of goat manure + 250 g of cinder husk, P5: 250 g of goat manure + 225 g of cinder husk, P6 : 275 g of goat manure + 200 g of cinder husk, P7 : 300 g of goat manure + 175 g of cinder husk, P8: 325g of goat manure +150 g of cinder husk. The data resulted from the research was analysed statistically with 5% of Tuker HSD examination. The distribution of optimal fertilizer for palm plantation growth was done by distributing 325 gr of goat manure + 150 gr of cinder husk treatment for the plant height, rod diameter, number of leaves and the number of midribs.

Abstract
ABSTRACT Competence of palm oil farmers in global trading competition depends on implementing 4 of 7 ISPO standards that was set by the government. The aims of this research were to : 1) Studying the Role of farmer-s extension in guiding the farmers to implement the standards, and 2) Analysing farmer competence in implementing standards set by the government. This research used survey method held from January to June 2019. Multi stage approcah was used in site selection (district and village). Sampling respondent consist of 91 palm oil farmers came from 3 villages representative. Data were analyzed by descriptive statistics (percentage, and Likerts scale). Result of this research showed that farmer profile was dominated by male with high school education, had 4 family members, Javanese who have 10-20 years farming experience, and had farming as the main livelihood. It has an impact on less capable of small holder farmers in fulfilling the 4 standards (legality of land ownership, farmers organization and farm managememt, enviromental management, and developing a sustainable agribusiness). The goverment was expected to sinergize with farmers and private sectors (coorporation) in improving farmers empowerment and independence during palm oil management according to the set up standards so that the farmers could compete globally. Abstract
The aim of this study was to examine the effect of VOC exposure from cigarette smoke on the plant growth regulator (PGR) patterns consisting of Indole Acetic Acid (IAA), Abscisic Acid (ABA), Ethylene, Salicylic Acid (SA) and Jasmonic Acid (JA) so that later it could be screened for some ornamental indoor plants that could be used as a phytoremediator agent. The ornamental plants used are Drimiopsis kirkii, Epipremnum pinnatum, Sanseviera trifasciata, Peperomia obtusifolia variegata and Dieffenbachia seguine. Exposure to plants with cigarette smoke containing formaldehyde as much as 0.1 ppm for 5.5 months then the content of the PGR was observed. The results showed that of the five ornamental plants used, there were two expression patterns of PGR. In D. kirkii and P. obtusiifolia-variegata there has been an increase in IAA, while 3 other species have decreased. Exposure to cigarette smoke decreases ABA in all five species while Ethylene increases. The most interesting discussed in this research is the increase in IAA in D. kirkii was not followed by changes in the expression of SA and JA. Abstract
The price of chili has characteristics that are unstable and fluctuating, this causes stakeholders difficulty in making decisions about the price of chili. The scarcity of chili production causes demand to increase so that the price of chili also rises. Information is needed regarding the predicted fluctuations in chili price trends so that market demand for chili can be known. The purpose of this research is to create a model and predicted the price of large red chili and curly red chili. This research was conducted using time series data price of large red chili and curly red chili during 40 periods starting from July 2016 up to October 2019 to predict of large price red chili and curly red chili for 12 the next periods began November 2019 and ended on October 2020. The data was obtained from Harga Pangan PIHPS (Pusat Informasi Harga Pangan Strategis) National Bank Indonesia application using the price of chili in the Special Region of Yogyakarta. The results of the forecasting model using ARIMA shows that the price of large red chili and curly red chili for 12 periods has increased gradually and forecasting results close to the actual data.

Abstract
The aims of this research are to test and analyze either direct or indirect effects of capital structure, firm growth, and profitability on firm value with dividend policy and corporate social responsibility (CSR) as moderators. Secondary data from the quarterly financial statements, annual reports, sustainability reports, and other reports of oil palm plantation companies listed in the Indonesian Stock Exchange for the period of 2009 - 2017 are used. Refer to recapitulations, the data that meet the criteria for the analysis are from 5 companies of the 16 companies listed. The research results show that the negative and highly significant effect of capital structure on the firm value during the period of the not stable global economy marked by the downward trend of crude palm oil (CPO) sales price can be mitigated or changed to become positive and significant by increasing the dividend payment onward the optimal stage consistently and also by implementing the optimal and consistent CSR. The positive and not significant effect of capital structure on the firm value through the company growth can also be mitigated or changed to become positive and significant by increasing the dividend payment onward the optimal stage consistently. Moreover, the thorough and accurate consideration on marginal benefits and costs of using the long term bank loan or obligation to finance the company operation becomes more essential to the company management due to the long investment period of oil palm estate (3 years). The company growth and profitability do not mediate the direct effect of capital structure on the company value either individually or together. The company growth that stimulates the increase of the profitability cannot strengthen the direct effect of capital structure that is dominated by the long-term debt on the company value. The company growth does not mediate the direct effect of capital structure on the profitability and the profitability does not mediate the direct effect of company growth on the company value.

Abstract
This study seeks to examine the determinants of firm value of listed manufacturing companies in Indonesia Stock Exchange (IDX) during a five-year period. The factors namely institutional ownership, firm size, profitability, leverage, and investment opportunity set. The sample was determined based on panel data, with a total sample of 144 manufacturing companies, so as many as 420 observations were obtained during the study period. The data analysis method used regression panel data. The results show size, return on assets, and market to book value of equity have a positive significant on firm value. The results also show debt to total assets have a negative significant on firm value. However, institutional ownership have a negative insignificant on firm value. The main value of this study is the identification of the factors that influence the firm value of listed manufacturing companies in Indonesia.

Abstract
This study aims to examine whether the perception of price, risk and quality of information influence the decision to make purchases online, this study was conducted by distributing questionnaires to millennials in DKI Jakarta where the sample was determined based on non-probability sampling techniques in the form of convenience sampling, which is a technique in which there is a closeness of comfort between the researcher and the target respondent so that the data used in this study are primary data. The data analysis technique used is multiple linear regression analysis with SPSS 24 statistical software. The results of this study say that perceived price, risk and quality of information influence the decision to make online purchases, this can be seen from the adjusted R Square of 0, 58 which means the decision to make an online purchase 58% is influenced by the perception of price, risk and quality of information and the rest is influenced by other factors outside this research.

Abstract
Penelitian ini bertujuan menganalisis tingkat pengaruh manajemen pengetahuan dan orientasi kewirausahaan terhadap daya saing dan kinerja UKM. Dengan pendekatan kuantitatif, penelitian ini menekankan pada analisa antara variabel. Penelitian ini dilaksanakan di Kota Makassar, dengan asumsi memiliki jumlah UKM terbesar di Sulawesi Selatan. Data primer berupa kuesioner yang diberikan kepada unit analisis, sedangkan data sekunder berupa laporan UKM dari Dinas Koperasi dan UKM Kota Makassar. Populasi penelitian adalah seluruh UKM di Kota Makassar yang memiliki izin. Pengambilan sampel dengan metode sampel acak secara proporsional untuk masing-masing sub sektor UKM sektor (meubel dan kayu; makanan dan minuman; logam dan perak; tekstil dan konveksi). Teknik analisis yang digunakan yaitu path analysis untuk menguji tingkat antar variabel. Hasil penelitian menunjukkan bahwa variabel manajemen pengetahuan tidak berpengaruh terhadap daya saing. Orientasi kewirausahaan berpengaruh signifikan terhadap daya saing dan kinerja UKM. Manajemen pengetahuan berpengaruh signifikan terhadap kinerja UKM. Rendahnya penerapan manajemen pengetahuan di kalangan pelaku usaha kecil dan menengah menjadi kelemahan UKM serta penyebab rendahnya daya saing

Abstract
Kinerja Layanan Jasa Pendidikan, antara harapan dan kenyataan Penelitian tentang kinerja layanan jasa pendidikan ini menggunakan lima dimensi kualitas pelayanan jasa dengan 5 variabel dan 15 indikator pelayanan. Analisis menggunakan diagram kartesius dengan membagi ke dalam 4 kuadran pelayanan yaitu A,B,C dan D. Terdapat 1 indikator pelayanan yang memiliki nilai sangat tinggi dan berada pada kuadran B yaitu penampilan fisik gedung. Satu indikator pelayanan yang memiliki nilai sangat rendah ( kuadran A ) dibandingkan dengan nilai harapan pelanggan yaitu jaringan internet. Tujuh indikator yang memiliki nilai rendah ( kuadran C) yaitu : ketepatan pelayanan, kesesuaian pelayanan dengan janji, kesigapan pegawai, penanganan keluhan mahasiswa, kemudahan menghubungi pegawai, tempat parkir dan kebersihan toilet. Enam indikator yang memiliki nilai tinggi ( kuadran D) yaitu : keramahan, kesopanan, reputasi kampus, kemampuan komunikasi pegawai, dan kebersihan lingkungan kelas

Abstract
The prevalence of central obesity shows a tendency to always increase, 18.8% in 2007, 26.6% in 2013, and 31.0% in 2018. Individuals with central obesity tend to have higher carbohydrate consumption than non-obese individuals central. Consumption of staple foods as the main source of excess carbohydrates will be converted into fat by the liver. This fat will be stored by the body in unlimited quantities and will result in the emergence of central obesity. Objective: This study aims to determine the relationship between consumption of carbohydrate sources with the incidence of central obesity in households in Bantul Regency. This study is an observational study with a cross-sectional study design. This research was conducted in Bantul Regency in 2019. The population in this study was households with a sample size of 81 households. Data on staple food consumption was obtained by interview using a food list questionnaire, central obesity was obtained by measuring stomach circumference. Statistical analysis using Fishers Exact test with p value <0.05. As many as 76.5% of households had central obesity and households with staple food consumption exceeded the RDA of 82.8%. There was a significant relationship (p = 0.021). The proportion of central obesity events was greater in subjects with low physical activity at 51.3% and in female subjects at 62.2% and significant (p <0.05. carbohydrate consumption exceeds RDA especially in women and those with low physical activity are at risk of developing central obesity.

Abstract
This study aims to partially examine (1) the effect of investment opportunitty, debt policy, profitability on dividend policy and (2) the effect of investment opportunitty, debt policy, profitability and dividend policy on firm value. Technical analysis uses panel regression common effect data, fixed effects and random effects on 110 manufacturing sector companies listed on the Indonesia efek Exchange for the period 2011-2018, and processed with e-views software version 8.0, after formulating a corporate value model in which dividend policy is intervning variable. The results of the chow and the Hausman test, a regression model that is suitable for expressing the relationship of the factors that determine dividend payments or company value in the form of a fixed effect panel data regression. Furthermore, the results obtained (1) Investment Opportunities (MBVA) negatively affect dividend payments, (2) Debt Policy (DER) negatively affect dividend payments, (3) Profitability (ROE) has a positive effect on dividend payments, (4) Investment Opportunitty ( MBVA) has a positive effect on Firm Value, (5) Debt Policy (DER) has a positive effect on Firm Value, (6) Profitability (ROE) has a positive effect on Firm Falue, (7) Dividend Policy (DPR) has a positive effect on Firm Value.

Abstract
This study aims at examining the influence of ethics, current information, and organizational culture on taking the ethical decision by tax consultants. The research method used is the quantitative method. The data collection technique used is mail survey. The mail survey was conducted by sending a letter to the tax consultants registered at the North Jakarta Indonesian Tax Consultants Association. The research analysis uses Multiple Linear Regression. The results showed that ethics significantly influence ethical decision making by tax consultants, but current information and organizational culture has been proven not to have a significant influence on ethical decision making by tax consultants.

Abstract
This study aims to examine whether the influence of information technology on accounting fraud and the effect of internal control on accounting fraud on employees who work at PT. Sugih Makmur Eka Industri Indonesia. This research uses purpose sampling method. The total sample of this research is 100 respondents which are related to all accounting activities, including internal control, and also those who work are supported by information technology in the company. Hypothesis testing in this study uses multiple linear regression analysis techniques with a statistical approach operated by SPSS Version 24. The results of this study indicate that 1) Information Technology Affects Accounting Fraud, and 2) Internal Control Affects Accounting Fraud.

Abstract
This paper discusses about of designing mathematics learning for technology vocational school students. The two-variable linear equation system is one of the topics taught to students in vocational schools. Learning the topic of two-variable linear equation systems has been designed by linking problems to the mechanical and automotive engineering expertise program. This is done so students are aware of the need to learn mathematics, especially SPLDV material. This learning design has been developed through a research development involving 42 students from SMK 1 Padang. Data was collected through observation, interviews, field notes and analysis of test results. The results of this study indicate that the SPLDV learning design linking problems to the mechanical engineering expertise program can help students develop their problem mathematics skills. Through this research it is also known that this learning design has also been able to increase the interest of vocational school students towards mathematics.

Abstract
This study aims to examine whether Intellectual Capital (IC) which includes VACA (CE), VAHU (HC), and STVA(SC) has a positive effect on company, with the leverage and total assets as control variables. The results of multiple linear regression tests (p-value) shows that the variables VACA (CE), VAHU (HC), STVA (SC) and Intellectual Capital (VAICTM) have a positive effect on SMEs financial performance. Therefore, the research further strengthens previous studies that Intellectual Capital and its components, which include Employed Capital, Human Capital and Structural Capital have an effect on SMEs financial performance. VAICTM is the best indicator to measure IC (Intellectual Capital). So to improve the financial performance of SMEs companies, it is necessary to pay attention to their employees (HC), capital structure (CE), and organizational structure in the company (SC).

Abstract
Batteries have been widely used for energy storage in various fields. Renewable energy systems, such as solar cells and wind turbines, produce energy depending on the weather. Because of that, batteries are needed in these fields to ensure energy availability. Electric vehicles also rely on batteries for energy storages. Therefore, the failure of battery management can result in large losses in various aspects. To prevent this, a number of studies on State of Health (SoH) of battery have been carried out. Prediction and estimation of SoH have been carried out using several methods such as SVM, deep learning, random forest and others. In many cases, these methods are applied by assuming that the change in SoH is a linear or non-linear phenomenon. However, in this paper, it is found that SoH exhibits chaotic behavior. Several well known methods to illustrate the Mackey-Glass Equation method and Lyapunov Exponent are considered to identify the chaotic nature of SoH. The obtained results can provide a new understanding of SoH behaviors on batteries, especially for the development of battery management system, control and safety system.

Abstract
A Switched reluctance motor (SRM) is known characterized by a robust, simple structure, and low cost. However, its torque density is generally lower than the induction motor (IM) and brushless DC motor (BLDC). In addition, axial SRM produces more torque than radial SRM by the same dimension. In this paper, performance improvement of axial SRM by adding a low-cost magnet in the stator yoke is investigated. A nonrare earth type magnet, Alnico, has been used for this research. Placement and dimensions of low-cost magnet affect performance improvement. Simulation and analysis using Finite Element Magnetic Method (FEMM) and Ansys Maxwell. A comparison between existing axial SRM and axial SRM with low-cost magnet is reported.

Abstract
Electrical energy is an important component in an industry, that is needed by electrical equipment / machines that exist in the industry. Currently, the majority of electrical energy is produced from fossils. Therefore, efficiency application of electricity loads in industries need to be logged and analyzed. To make electricity load efficiency possible, it can be done by monitoring and logging real-time electricity loads in the industry. So that, the electrical power consumed can be analyzed. In this paper, a 3-phase electricity monitoring system is builded for Low Voltage Power Distribution (LVDP) that can be monitored anytime and anywhere via internet for the needs of electricity quality analysis. Monitoring parameters are voltage, current, real power, apparent power, power factor, IHD voltage and current, and voltage and current THD for each phase. That variables send to database and display on the web. Error reading of voltage sensor is found on average error 0.00254% compared to multimeter. For current sensor, the average error is 0.0074%. On the user interface, all functions are running well, so that, it can be utilized for the needs of electrical analysis, which means the power consumed and the malconsumed can be known.

Abstract
Private or public companies need tools to make easy decision making process. This research conducted at PT. FIF Medan. Focus in decision making to provision motor vehicle loans. The study do because PT. FIF Medan has problems to determining whether consumers are given financing. Research using Back Propagation Neural Network. Back Propagation Neural Network is a method that simplifies complex problems. Simplifying model by taking the most essential core issues. Research will be carried out with the stages of identifying problems, determining needs, analyzing, and choosing alternatives. 8 (eight) criteria will be parameters, including the amount of dependents, length of work, home status, history of finance, employee workplace, vehicle type, financing tenure, and monthly income.

Abstract
Consumers lifestyle has been greatly shifted due to the massive development of social media and brought unprecedented opportunities and challenges for marketing activities. There are few steps leading to consumer in deciding the product that they want to buy. This study helps to explain determinants and consequences of social media marketing in Instagram context and its relationship with purchase intention. To this end, an empirical study applying partial least square (PLS) were conducted. Utilising 254 of sample size, the results reveal that community building is crucial determinants of social media marketing in online culinary information search which later affects purchase intention. Further, this study clarifies creating brand identity in Instagram is a way to build a brand image. This research has a potential impact to provide renewed insights for researchers into determinants and consequences of individual purchase intention.

Abstract
The English Proficiency Test (EPrT) is a prediction test for English as a Foreign Language (TOEFL), which is a prerequisite for graduation at XYZ University. The Language Center (LaC) provides a course for EPrT preparation. The course post-test data shows that only 74% of students met the graduation prerequisites. This study aims to develop an English course design based on the students- English skill cluster. This study uses K-Means clustering approach to classify the students based on English skill. The respondents of this study are 397 students who joined the EPrT preparation course in October and November 2018. The 397 students are distributed into 3 clusters, which are 174 students in cluster 1, 116 students in cluster 2, and 107 students in cluster 3. Cluster 1 consists of students with low EPrT score, especially in listening score. Cluster 2 consists of students with moderate EPrT score but low grammar score. Cluster 2 consists of students with high EPrT score in all listening, grammar, and reading scores. Therefore, the EPrT preparation course is suggested to have 3 different levels, instead of 1 level as now. The course materials are designed to be suitable for students- initial English skill in each level.

Abstract
Soil is the material on which the structure built.. Soil conditions on the site greatly affect the type of foundation used. Clay is a bad type of soil if it has poor soil properties such as high plasticity, low shear strength, high swelling, and large shrinkage potential. Soil stabilization is an effort to improve the quality of the soil by using certain materials to increase soil strength. Soil improvement by using mixture materials are mostly done to stabilize the soil. The mixing material used is Lapindo mud. A number of soil improvement techniques are offered to overcome problems in soft soil. The selection of soil improvement techniques is generally based on the formation of soil geology, soil characteristics, and costs. The stabilization used is emulsion asphalt which is locked of 8% and Lapindo mud variation of 3%, 6%, 9% and 12%. The results of physical and mechanical properties on soil material with stabilization of Lapindo mud and emulsion asphalt were obtained that the specific gravity increased by about 68%, with the density value of 16% and the dry weight content of 6%. In the compressive strength testing, the more Lapindo mud mixture, the less compressive strength (qu) value.

Abstract
Soft clay is soil that need microscopic to sub microscopic size originating from the chemical weathering of rock compilers. Clay soil is very hard in a dry state and is plastic at moderate water content. At higher water contents the clay soil is sticky (cohesive) and very soft. Soil stabilization is an effort to improve the quality of the soil by using certain materials to increase soil strength. Soil stabilization is the process of mixing soil with certain materials to improve the technical properties of the soil and is an attempt to change or improve the technical properties of the soil to meet certain technical requirements of the soil carrying capacity. This research is an experimental study to determine the carrying capacity of clay soil stability using volcanic ash deposits and tailings instead of cement. The research variables are volcanic ash deposits which is locked of 8% and tailings with the variation of 4%, 5%, 6% and ripening for 3 days, 7 days and 14 days. The benefits of this experimental study are expected to get the carrying capacity of the soil from stabilized soil greater than the carrying capacity of the original soil by the unconfined compression test (UCS).

Abstract
The research reported herein is to reveal the effect of in ovo injection (IOI) of L-gln into the eggs of Indonesian native chicken on hatching weight and subsequent weights at 4 and 8 weeks of age. The research was arranged as a factorial experiment 2 x 5 based on a completely randomized design with unequal replication; the first factor was L-gln (L) in isotonic NaCl, with 5 levels: P0 – negative control (without injection), P1 – positive control (isotonic sterilized saline), P2, P3 and P4 – 0.5, 1.0, and 1.5% respectively, and the second was sex (S), with 2 levels (male and female). As much as 97 newly hatched chicks were selected, weighed, tagged the wing, and used in this study. Data were analyzed by variance analysis. The results indicated that from hatching day up to 3 weeks of ages, the weights of newly hatched chicken either with the injection of different levels of L-gln or between the two sexes were not significantly different. There was a strong relationship between egg weight and day old weight of newly hatched chicks, but no significant relationship at further ages. Differences between the two sexes and different levels of L-gln showed a significant effect at 4 weeks of age and continued at 8 weeks. The weights of all IOI chicks were heavier compared to that of the negative control chicks.. The weight of male chicks was heavier compared to that of the female, and there was no significant effect of increasing level of IOI L-gln. The weight of the female chicks increased gradually with increasing level of L-gln. In conclusion, in ovo injection of L-gln positively improved the productivity of Indonesian native chicken in both sexes.

Abstract
Physicochemical qualities and total flavonoids qualities of fermented milk can be enhanced by the utilization of natural ingredients of red dragon fruit skin (Hylocereus polyrhizus). The purpose of this study was to analyze the effect of red dragon fruit skin concentratrion and length of incubation as well as their interaction toward physicochemical characteristics and total flavonoid qualities of fermented milk with the addition of red dragon fruit skin. The research was conducted at the Laboratory of Dairy Processing Biotechnology and Hasanuddin University-s Biopharmaca Laboratory. The research method used was experimental method by using complete randomaized design (RAL) with 2 (two) factors. The first factor (A) was the dragon fruit skin concentration 0%, 20%, 40% and 60% and the second factor was the incubation period ranging from12 hours, 14 hours, until 16 hours. The treatments were repeated three times each. The data were processed statistically with analysis of variance followed by the smallest real difference test. The research result showed that high concentration of red dragon fruit skin and long incubation could increase the activity of Lactid Acid Bacterial (BAL) during fermentation process, so it increased the total lactid acid, fat content and total flavonoid but decreased carbohydrate and protein content of fermented milk. The concentration of dragon fruit skin and long incubation in the manufacture of fermented milk will give interaction to protein and flavonoid of fermented milk. Therefore, it can be suggested that the concentration of dragon fruit skin used in producing fermented milk should be 60% and take 12 hours.
